Fw: Daddy's recipes



Amay's Special Sausage Soup
Mixture of everything.  I don't have measurements as I rarely measure spices.  It's alwasy to taste.
 
1 Bell pepper
2  cups Mushrooms
1 cup Corn
3 Potatoes
1 Onion
1 can Chili beans
4 carrots Carrots
6 stalks Celery
2 Smoked sausages
3 Bay leaves
3 Beef boulion cubes
4 Cloves Garlic
1 tsp Paprika
1 tsp Curry
1 tsp Thyme
1 tsp Rosemary
1 tsp Oregano
Season salt (to taste)
1/2 tsp White pepper
 
Add it all to a large pot.  Boil roughly 30 minutes.  


Daddy's Meatloaf
2 lbs lean ground beef 
1/2 cup milk 
2 eggs 
1 tsp pepper 
1 tsp salt 
1 tsp season salt 
1/4 tsp ginger 
1 tblsp A1 Sauce 
1 package Onion soup mix 
 cup crushed saltine crackers 
1 glove garlic (i used the garlic in a jar not real garlic cloves" 
*optional-one can mushrooms, will need do dice 
*optional-one diced onion 

mix and place in dish. cover with aluminum foil and cook at 350 degrees for 45 - 60 minutes. 

Glaze:
1/2 cup of ketchup 
1 tblesp Worcestershire sauce 
4 tblspns brown sugar. 

combine glaze mix and pour over meatloaf. 

cook uncovered for another 15 - 30 minutes. 

cool and serve 
 

Daddy's Potato Soup

1 lb bacon.   cut the bacon into small bits and cook till done.  set aside.

in a large pot.  fill half full of water and add.
6 chopped potatos
1 clove garlic
3 ro 4 celery stalks, diced.
1 onion
salt
pepper

boil for 20 minutes.   

after potatos are soft, drain part of the water out of that pot.  The same amount of water that you drain, replace that same amount with whole milk, I tend to add a few cups extra so that it's more cream that potato stock.  
Add the bacon and a teaspoon of bacon grease to the pot.  
Bring to boil then simmer, covered, for 10 minutes or so.   Salt and pepper to taste, keeping in mind that the potatoes tend to soak up the salt.    

Serve with cheddar cheese, chives, and sour cream on top.



Sausage and Potato Skillet

potatoes, sliced
onions, chopped
sliced lingquisa sausage
2 tsps curry
1 tsp paprika
salt
pepper
dash or ground red pepper
1 tsp Oregano
2 tsp Thyme
2 tsp butter (add more as you cook to keep the potatoes moist)

Add all the ingredients to a skillet.  Fry until potatos fall apart.


Chicken Soup

in a large pot, add
2 chicken breasts.
3 chicken bullion cubes

boil till cooked.  shred the chicken and add back to the pot

6 celery stalks
1 onion
2 handfulls of Amish Noodles
2 cloves garlic
4 carrots
season salt
pepper.

bring to boil and simmer for 15 minutes.


Mushroom Chicken and Rice

4 chicken breasts.  

season with salt and pepper

in a large bowl
2-3 cups of rice.    wet and rinse.

in a large pyrex dish, place rice in the dish.
place the chicken on top of the rice.

in the large bowl mix
1 can cream of mushroom soup
1 can of water (cream of mushroom can full of water)

pour soup over chicken and rice.  cover with foil with foil and cook in the oven
for 45 mintues at 350 degrees.   remove foile, cook and additional 10 minutes.


Cabbage Rolls
1 head cabbage
1 lb ground beef
2 tsp salt
1 c rice, uncooked
1 c tomato juice
3 cloves garlic
1 tsp cinnamon
1 tsp pepper
1 sm can tomatoes
1 c water
1/2 c lemon juice
1 tsp garlic salt

core cabbage, place in deep pan, cover with water and bring to a boil.  Mash garlic with 1 teaspoon of salt and set aside.
put rice in a bowl, was well and drain.   Add 1 teaspoon of salt and pepper and mix.  Add ground meat and mix.  Add can of 
tomoatoes and cinnamon and mix.  Remove cabbage from pan, leaf by leaf, when soft enought to roll.  Rinse in cold water.
Cut end of cabbage and put in bottom of pan to be used for cooking rols on stove top burner.   Spread about a tablsepoon fo meat
and rice mixture over each large cabbage leaf:  use less for small leafs.  Roll leaves tightly and place in pan, seam side down.
Combine tomato juice and water and pour over rolls.  sprinkle with garlic mixture.  brint to boil, cover pan and simmer 45 minutes.
15 mintues befor rolls are done, combine lemon juice and garlic salt and pour over rolls.  ready to serve.  lemone juice gives added flavor.


Garbage Soup

1 lb ground beef.   brown
2 tsp salt
2 tsp pepper
2 tsp curry
1 tsp paprika
1/2 tsp ground red pepper
2 cloves garlic
1 onion, chopped
potatoes, chopped
1/2 cup peas
1/2 cup corn
3 carrots, chopped
1 large can chopped tomatoes

can also add 1 cup spinach

add all to a large pot with enough water to cover all of the ingredients, plus an additional cup (depends on how wet you want your soup)
bring to boil, cover, and simmer for 30 minutes.

scoop with a ladle into the bowl you will eat from, and sprinkle with sharp cheddar cheese.
